Recipe Modifications

Instant Pot Recipe

This recipe works in a 6 quart Instant Pot.  The beef variety of Friendship Soup is not compatible with a smaller pressure cooker.

Use the same ingredients called for in the original recipe on the soup jar except use 2 quarts of water instead of 3, and add 1 T vegetable oil so that ground beef won’t stick to the bottom of your Instant Pot.

  • Heat 1 T oil on “Saute Mode” in you Instant Pot and then brown ground beef.

  • Add all ingredients except for the pasta and mix together.

  • Set Instant Pot to “Pressure Cook” on High for 8 minutes.  DO NOT VENT manually for at least 20 minutes.

  • Add pasta on Saute Mode and serve when pasta is cooked to your liking.

Cheryl's Kielbasa Friendship Soup

  • INGREDIENTS: 1 jar of ZOE Friendship Soup Mix-Beef version, 24 ounces of smoked sausage cut in chunks (I use Kielbasa), 16 ounces frozen corn, 1 can (15 ounces) black beans (rinsed and drained),  pepper to taste, 2 (10 ounce) cans  RoTel tomatoes - undrained, 1 (6 ounce) can tomato paste, and 3 quarts water.

  • TO PREPARE SOUP: Remove pasta from top of soup jar, and set aside. In a large pot over medium heat put RoTel tomatoes, tomato paste, water, and rest of soup mix. Bring to a boil, then reduce heat to low. Cover, and simmer for 45 minutes. Stir in the kielbasa, black beans, corn, and pasta,  cover, and simmer 15 to 20 minutes, or until the pasta, peas, lentils and barley are tender.

Easy and Delicious Variations

  • Great with ground turkey or ground pork instead of ground beef.

  • Tomato sauce can be used instead of tomato paste, and then you can add less water.
