Curried Lentil Friendship Soup 


Ingredients in the jar: Red lentils, Dried red chili peppers, Curry powder, Dried onion flakes, Dried minced garlic, Vegetarian base (Salt, lactose, hydrolyzed corn protein, sugar, hydrolyzed corn soy protein, torula yeast, onion powder, autolyzed yeast, disodium inosinate, disodium guanylate, turmeric, natural flavoring, spices, hydrolyzed soy wheat gluten protein, soy flour). NO MSG, Kosher Dairy, Lacto-Vegetarian. Optional spice rub packet:  Turmeric, ginger, chili powder, cinnamon, salt.

Original Recipe

Additional Ingredients Needed:  2 (13.5 oz.) cans full fat coconut milk, water, salt, pepper. Optional: 1 lb boneless skinless chicken  

To Prepare:  Remove spice pack from jar.  Place all other jar ingredients in a large cooking pot. Add 7 cups water and coconut milk. Bring to boil. Reduce heat to low, and simmer covered until lentils are tender, about 15 minutes.  Season to taste with salt and pepper.  Remove and discard chili peppers before serving.

Optional Chicken:  Dice 1 lb chicken and coat with spice mix.  Heat 1 T. oil in pan.  Sauté chicken until no longer pink.  Add cooked chicken to lentil soup during last 5 minutes of simmering.
